Cashew kernels are graded by colour, wholeness and how many nuts make up a pound. Master the codes and you'll never overpay or under-spec an order again.
A grade like W320 breaks down simply:
| Grade | Nuts / lb | Character | Best for |
|---|---|---|---|
| W180 | ~170–180 | "King of cashews" — largest whole kernel | Gifting, premium retail, garnish |
| W210 | ~200–210 | Jumbo, large and showy | Premium snacking, hampers |
| W240 | ~220–240 | Attractive, well-sized, great value | Sweets, table nuts, gifting |
| W320 | ~300–320 | The world's most popular grade | Everyday cooking, roasting, mithai |
| W450 | ~400–450 | Smallest whole white kernel | Budget cooking, mass snacking |
Not every kernel survives shelling whole. Broken grades cost less and are ideal when shape doesn't matter — gravies, baking, nut butters, sweets.
| Code | Meaning | Typical use |
|---|---|---|
| JH / Splits | Butts & splits — kernel halved lengthwise | Curries, pulao, baking |
| LWP | Large White Pieces | Sweets, cooking |
| SWP | Small White Pieces | Cashew paste, gravies |
| BB | Baby Bits — smallest fragments | Nut butter, garnish, flour |
| SW / SSW | Scorched wholes (slight heat colour) | Roasting, masala nuts |
| DW | Dessert wholes (off-white, sound kernel) | Budget sweets & cooking |
